If you have a package of puff pastry waiting in the freezer for a long time, then it’s time to make a crispy puff pie with berries. Moreover, while their season is still in full swing. In general, it doesn’t matter whether it’s yeasty or not. The pie can be baked from any. Baked goods made from yeast dough are more fluffy and airy, while those made from yeast-free dough are crispier. If you don't have fresh berries, use frozen ones. Just defrost them first. Be sure to brush the top of the pie with beaten egg. It will add a beautiful color and also help create a crispy crust. Baking is also good because it is very quick to prepare. Prepare all the ingredients for the berry layer pie. Remove the puff pastry from the freezer in advance and let it thaw. This may take about 20 minutes (see package instructions).
Prepare the cherries. Sort the berries, then wash and dry on a towel. Using a pin, tube, tweezers or any other method, remove the seeds.
Place the cherries in a bowl and add sugar. Let it brew for about 15-20 minutes, and then drain the resulting juice. You can drain the cherries in a colander.
Sprinkle your work surface with flour. Roll out the defrosted dough with a rolling pin in one direction into a round layer slightly larger than the baking pan.
Line the baking dish with special paper. Spread the dough over it, forming sides. Trim any overhanging edges with a knife and save for the top of the pie.
Add potato starch, cinnamon and vanilla sugar to the berries and mix. If necessary, you can add more sugar. Distribute them evenly over the pan.
Form the remaining dough into a lattice. To do this, roll it out onto a floured surface into a layer. Cut into strips and place them on the pie, overlapping each other, forming a lattice.
Preheat the oven to 200˚C. Break an egg into a bowl and beat it with a fork. Then use a pastry brush to spread it over the entire surface of the pie.
Bake the pie for about 20-30 minutes. It should acquire a ruddy, golden hue. Then remove the pie from the oven, cool and, when serving, sprinkle with powdered sugar through a sieve.
