Grind half the raspberries in a blender and rub through a sieve to remove the seeds.
Melt honey with 50 ml of water in a jam bowl or wide, deep saucepan and bring to a boil over medium heat.
Stir raspberry puree into honey and cook over low heat for 10 minutes.
Add whole raspberries and cook for 10 minutes, increasing the heat slightly.
Mix agagr-agar and 100 ml of room temperature water in a small saucepan and place over medium heat. Stirring all the time so that there are no lumps, bring to a boil, cook for 1 minute, remove from heat.
Sprinkle the surface of the raspberry jam with citric acid and stir. Pour in water with agar, stir the confiture vigorously, and cook for 5 minutes.
Place the hot confiture into sterilized jars, cover with parchment, let cool, then close with sterilized lids.
