The recipe for shortbread pie with cottage cheese and berries is extremely simple: crumbly shortbread dough, delicate curd cream and fresh juicy berries. What you need to surprise and delight unexpected guests. Choose berries to taste. Any will do. It is better to combine sweet and sweet and sour fruits. Choose natural and fresh cottage cheese. Fat content doesn't matter. It is better to take it in packs, it is more uniform in structure. Just make sure that the cottage cheese is not too liquid. Or, replace it with ricotta. The finished pie can be decorated with powdered sugar and mint leaves. There is no shame in serving such baked goods on a holiday table or on a special occasion.

Prepare all the ingredients for shortbread pie with cottage cheese and berries. Place the butter in the freezer for 10 minutes and then cut into pieces.
Sift the flour through a sieve with baking powder to saturate it with oxygen and get rid of debris. In a bowl, combine chopped butter, salt, sugar and mix. Add flour and grind into crumbs.
Add an egg, 1-2 tablespoons of ice water to the creamy crumbs and quickly knead into a homogeneous dough. Roll it into a ball, wrap it in cling film and put it in the refrigerator for 20 minutes.
Prepare a baking dish. It is best to use a springform pan, as it is quite difficult to remove the cake from solid pans. Grease the pan with butter or vegetable oil, or line the bottom with parchment.
Distribute the dough in the mold, forming high sides. Prick all over the surface with a fork. Then refrigerate for 20-30 minutes while you prepare the filling.
Grind the cottage cheese through a sieve or grind with a blender. Add eggs, starch, sugar to it and mix with a mixer until smooth. To make the mass more homogeneous, sugar can be replaced with powder.
Prepare the berries. Remove dry debris from blackcurrants, tear off branches and sort for spoiled berries. Then rinse thoroughly and dry on a towel.
Remove the branches from the red currants and sort the berries themselves. Also place in a colander and rinse thoroughly. Then let the water drain. Dry on a towel.
Sort the raspberries and blackberries and then place in a colander. Place it in a pan of water and rinse gently, being careful not to damage the berries. Then let the water drain and dry them on a towel.
Remove the mold with the dough from the refrigerator and spread the curd filling over it. Arrange the berries in random order. Black and blue fruits can be alternated to make it look beautiful.
Preheat the oven to 180˚C. Place the pie pan in it and bake for about 40-45 minutes. Check readiness with a wooden skewer.
Remove cake from pan and cool on a wire rack. Before serving, sprinkle with powdered sugar, sifting it through a sieve. Serve chilled, cut into pieces.
