The dough holds its shape quite well when cooked, so you can add raisins or any other dried fruits that you have on hand to the cheesecakes. The taste of the dish can also be varied with spices. Prepare all the ingredients for making lazy cottage cheese pancakes according to the list. Mash the cottage cheese with a fork or grind through a sieve. You can also grind it with a blender.
Beat the eggs separately with a whisk or mixer, and then add to the curd mass. Add flour, semolina, salt, sugar sifted through a sieve and mix. Leave for 10 minutes.
Rinse the raisins under running water and pour boiling water over them. Leave for 30 minutes. Then place it on a sieve and dry. Place into curd mixture and stir.
Wet your hands in water and, pinching off small pieces of dough, form round identical cheesecakes. Place them on a plate sprinkled with a thin layer of flour.
