Herring butter with melted cheese is a simple appetizer that was once prepared in almost every kitchen, but was later unfairly forgotten. The classic recipe for herring oil is extremely simple, even a beginner can handle it. If cutting herring seems difficult to you, take ready-made fillets. Boil the carrots in advance so that they have time to cool to room temperature, or simply purchase already boiled carrots, then preparing herring oil will take you no more than 5 minutes! Serve it with potatoes, spread it on Borodino bread, fill tartlets or stuff half eggs - in any form, herring oil will always come in handy!

Place the unpeeled carrots in a small saucepan, cover with cold water and bring to a boil over high heat. Reduce heat to medium and cook carrots for 15-20 minutes. Drain the water and cool the carrots.
Remove the butter from the refrigerator in advance to allow it to warm to room temperature. Peel the carrots and cut into small pieces. Remove the processed cheese from the packaging and also cut into pieces.
Cut off the head and tail of the herring. Cut the fish along the spine and remove the skin. Using a narrow knife, carefully cut two fillets from the spinal bone. Use tweezers to remove small bones. Rinse the fillets with cold water and pat dry with a paper towel. Cut the fillet into small pieces.
Pass carrots, herring and melted cheese through a meat grinder. Add butter and mix thoroughly. Place the prepared herring oil in a small bowl and serve.
