I’m sharing the recipe for our favorite honey cake with sour cream.

Honey or brown sugar - 70 g
Butter 82.5% - 100 g
Eggs - 2 pcs.
Baking soda - 7 g
Flour - 410 g
Sour cream 30% - 400 g
Cream 35% (fatty) - 400 g
Powdered sugar - 6 tbsp.

1. Boil butter with sugar and honey in a small saucepan. When it boils, add baking soda and cook for another 30 seconds. Cool the mixture for 10 minutes, add the egg and mix well. Add flour and prepare the dough.
2. Divide the dough into 10-12 parts and roll out very thin. Approximately 2mm thick. Bake at 180 degrees until golden brown.
3. Make cream. Beat cream with powdered sugar. Then add sour cream and beat again. Spread cream on each cake. Coat the edges with cream and leave the cake in the refrigerator for 6-10 hours. Chop the trimmings and place on top of the cake.
