The recipe for this ice cream is simple, so even a novice cook can handle it. And the result will be amazing! Please note - in order for the avocado pulp to retain its attractive color, do not cut it in advance, but after peeling and cutting into pieces, immediately sprinkle with lime or lemon juice. The whipped creamy mass with avocado pulp can be frozen in a large container and served by forming balls with a special spoon, cooked in a freezer or poured into portioned molds - children especially appreciate this serving.

To remove the waxy layer, wash the lime in hot water with a stiff brush. Dry with a paper towel. Use a fine grater to remove the zest. Cut the lime in half and squeeze out the juice.

Cut the avocado lengthwise and carefully separate into halves. Remove the pit, scoop out the pulp with a tablespoon and place in the glass of an immersion blender. Pour in lime juice and grind until smooth.

Half an hour before you start making ice cream, place the mixing bowl and mixer blades in the refrigerator. The cream should also be cold. This is required to ensure that the cream whips quickly and reliably.

Pour the cream into a bowl and add the powdered sugar. Start whipping the cream with a mixer at low speed at first, gradually increasing to maximum. After 3-5 minutes the mass should thicken sufficiently.

Add lime zest and avocado puree to whipped cream. Gently stir the mixture with a silicone spatula. Mix with light movements from bottom to top, being careful not to disturb the airy texture of the cream.

Transfer the creamy mixture into a container with an airtight lid and put it in the freezer. After 30 minutes, remove the container and stir the ice cream with a fork. This is required to destroy the ice crystals in the ice cream. Repeat twice at 30 minute intervals. After 3 hours the ice cream will be ready.
