Diet shortbread pie with berries (PP recipe) requires a minimal amount of butter, but the dough will retain its crumbly structure and creamy taste. We will also replace wheat flour with whole grain flour. It contains more fiber and, accordingly, benefits for the body. The shortbread dough is dense and holds the watery berries and liquid filling well. For the filling we will mix strawberries and blueberries. But, in general, any berry will do, both fresh and frozen. Instead of sugar, we will add healthier honey to the filling. If yours is very thick, warm it up a little in the microwave, cool, and then add to the filling. The pie recipe is quite simple and can be baked by both experienced cooks and beginners. And everyone will like the result!

Prepare all ingredients for dietary berry shortbread pie. Separate the white from the yolk. We will use the white for the dough, and the yolk will be useful for the filling.
Sift the flour through a sieve into a large bowl. Add baking powder and vanilla sugar to it, stir so that the ingredients are evenly distributed.
Melt the butter in any convenient way (in a hot water bath or in the microwave), and then cool to room temperature. Mix it with sugar and beat with a whisk.
Add the egg-butter mixture to the sifted flour and mix thoroughly. You should get a homogeneous dough without lumps. If necessary, add a little more flour if the dough seems runny.
Knead the dough thoroughly with your hands on a floured work surface. The dough should be elastic and fairly tight. Roll into a ball, wrap in cling film and refrigerate for 15 minutes.
Preheat the oven to 200˚C. Grease a 22 cm diameter mold with butter or line it with baking paper.
Roll out the dough on a work surface into a thin layer, slightly larger in diameter than the mold. Place it in the mold, making high sides. Prick all over the surface with a fork.
Place the crust in a preheated oven and bake for about 10-15 minutes until done. The dough should brown a little and rise. Remove the crust from the oven and cool slightly.
To fill, whisk sour cream, yogurt, yolk and liquid honey until smooth. Wash the berries in advance, sort and dry. Place the berries on the crust, cover everything with filling and bake for about 30 minutes at 160˚C.
Do not remove the pie from the oven, but let it cool right in it. Then cut it into portions and serve with tea, or milk or kefir.
