There is nothing tastier than a pie with light berry jelly! A true summer pastry that you'll want to make again and again. You can choose any berries, even frozen. But it will be better with seasonal ones. We will prepare jelly from fresh blackcurrants. Try it too! And then you will experiment with the filling. The pie should be served cold, so if you are planning to make dessert for a celebration, bake it the day before, and the next day take it out of the refrigerator and immediately serve it to your guests. The pie is very good in hot weather; it comes out with a piquant sourness. And the delicate jelly is wonderfully refreshing.

Prepare all the ingredients according to the list for making berry jelly pie. Sort the blackcurrants and remove any spoiled ones. Dry the berries on a towel.
Grind the cottage cheese through a sieve. Cut the cold butter with a knife. Add sugar to the butter and mix into crumbs. Add sifted flour, cottage cheese and knead into a homogeneous dough. Roll into a ball and refrigerate for 30 minutes.
Prepare the filling. Dissolve gelatin in water according to the instructions on the package. Place the berries in a saucepan and bring to a boil. Pour in the gelatin, stir, bring to a boil and immediately remove from heat. Cool.
Preheat the oven to 180˚C. Line a baking dish with paper or grease with butter. Lay out the dough, forming sides. Bake for 20-25 minutes.
Remove the pie from the oven and cool completely to room temperature. Then fill it with the prepared jelly and put it in the refrigerator for 2-3 hours, or better yet overnight, so that it hardens.
Remove the pie from the refrigerator just before serving. Carefully cut into portions. You can decorate with fresh berries and sprinkle with powder.
