A recipe for Lenten berry pie can come in handy at any time. After all, this is not only a dish for a special menu, but also simply a healthy pastry. Even without butter, eggs and milk, the pie turns out very tasty. Add fresh or frozen berries, your favorite nuts and raisins. And you can no longer say that Lenten baking is not for everybody. In this recipe, we suggest mixing two types of flour: wheat and whole grain. The latter will enrich the dough with healthy fiber. We will bake the pie in the oven. But, it can also be prepared in a slow cooker in the “Baking” mode. Delicious, aromatic with a slight sourness, the pie is perfect for family tea drinking.

Prepare all ingredients for Lenten berry pie. Pour the rooibos into a cup, pour 200 ml of boiling water and leave for 5 minutes to brew, strain. Cool to room temperature.
Take a bowl, pour the rooibos into it, add sugar and honey, stir until they completely dissolve in the water. Then add baking powder and mix again. Bubbles should appear.
Sift the flour through a sieve twice to saturate it with oxygen. In portions, mixing thoroughly after each, pour it into the sweet tea mixture and knead into a homogeneous dough.
Rinse the berries thoroughly under clean running water, sort them, and remove any spoiled ones. Drain in a colander, then place them on a towel and dry.
Heat a dry frying pan without oil, add the nuts and dry until golden brown. Cool and then finely chop if necessary. You can use walnuts, hazelnuts or a mix.
Pour boiling water over the raisins and leave for 15 minutes to swell a little. Then place in a sieve to drain the water. Place on a towel and dry thoroughly.
Place berries, raisins and nuts in the dough and mix from bottom to top so that they are evenly distributed throughout the entire volume. Try not to damage the berries.
Preheat the oven to 180˚C. Grease a baking dish with a diameter of 20-22 cm with vegetable oil or line with baking paper.
Pour the dough into the prepared pan and smooth it out. Bake for about 45-55 minutes, depending on your oven. You can check readiness with a wooden skewer - it should come out dry.
Cool the cake in the pan for 15 minutes, then remove and transfer to a wire rack. Serve with hot drinks (tea, coffee, cocoa). Decorate with berries or powdered sugar if desired.
