The name of the pie “Berries under the Snow” very accurately describes the dessert. A successful combination of crumbly shortbread dough, sweet and sour berries and airy proteins that cover the filling like snow. Baking is easy to prepare and takes little time. And it’s definitely worth surprising your guests with such a pie. We will prepare this dessert with cherries. But we can definitely say that there are many options. Prepared with lingonberries and cranberries, as well as red and black currants. The main thing is that the berry is sour. Then it will highlight the sweetness of the whipped egg whites very well. The most difficult thing in the whole process is to get a thick protein cap. We recommend adding a little lemon juice to the whites. Then preparing the pie will not be difficult. Enjoy your tea.

Prepare all the ingredients according to the list for the “Berries in the Snow” pie. Remove the butter from the refrigerator in advance to soften it.
To begin, carefully separate the whites from the yolks. Try not to let a drop of yolk get into the white. Pour the yolks into a bowl and leave the whites at room temperature.
Grind the yolks with half the sugar until a light mass is obtained. It is desirable that the sugar dissolves. Add softened butter, baking powder and stir.
Sift the flour through a sieve to saturate it with oxygen. Then start adding it to the egg-butter mixture in parts, mixing thoroughly after each. You may need a little more or less flour, depending on the dough. It should be soft and not stick to your hands.
Grease the mold with butter and sprinkle with flour. Then place the dough on the bottom. It is not necessary to make sides. Flatten and prick with a fork to prevent the dough from rising during baking.
Preheat the oven to 180˚C. Bake the crust for about 20 minutes. Then remove it from the oven. Beat the egg whites with the remaining sugar until soft peaks form.
Place cherries on the crust and cover it with whipped egg whites. Level it out. Bake the pie for another 15-20 minutes until done. Cool in the pan and serve.
