To prepare an original filling for pancakes, you don’t have to use any unusual products. Look in the refrigerator - there will probably be a couple of apples, bananas or oranges, a pack of cottage cheese, a package of salted fish or herring. All this easily turns into extraordinary fillings.

Apples with cinnamon. Grate the apples, sprinkle with lemon juice and sprinkle with sugar and cinnamon. Leave for 10 minutes until the apples release their juice. Lightly squeeze the apples with your hands and wrap the filling into pancakes. Serve immediately.
Fish with pickles and bechamel sauce. For bechamel sauce, melt 1 tbsp. l. butter in a saucepan, add 1 tbsp. l. flour and fry for 1 minute. Pour in 300 ml of milk in a thin stream and, stirring, bring to a boil. Cook for 5 minutes, season with salt, white pepper and nutmeg. Mix the sauce with 500 g of boiled white fish fillet and two pickled cucumber cubes. Let's reveal a secret: if you don't have fish fillets on hand, you can take a couple of cans of canned pink salmon.
Cottage cheese with honey and berries. Mix cottage cheese with honey and sour cream. If desired, you can beat this mass until smooth to form a curd cream. If you use fresh frozen berries, first defrost them in the refrigerator and drain the juice. Mix berries with cottage cheese.
Radishes with eggs and dill. Cut radishes and boiled eggs into small cubes, add finely chopped dill and season with sour cream. Salt and pepper the filling. Wrap the filling in pancakes and serve with salted fish. Or spread it into several layers in a mince pie.
Herring with boiled eggs. Cut the boiled eggs and herring fillets into cubes. Add green onions if desired. Season with a mixture of mustard, sunflower oil and lemon juice.
Liver pate. Fry 1 large onion in butter. Add 600g diced beef or veal liver and continue cooking until the liver is cooked through but still slightly pink inside. Season with salt and pepper, pour 50 ml of cognac into the pan and bring to a boil. Remove from heat and cool. Grind the liver and onion in a blender, add a pinch of ground nutmeg. Place 200 g of softened butter into the pate and beat well.
Oranges and chocolate. Peel three oranges and scoop out the flesh with a sharp small knife. Melt 1 tbsp in a frying pan. l. butter, add 3 tbsp. l. sugar and bring to a boil, cook over medium heat for 3 minutes. Melt 100 g of chocolate in a water bath or in the microwave. Brush the pancakes with chocolate, add a few orange slices and fold into triangles.
Banana cream. Whip the cream with sugar and vanilla extract, add banana puree and beat well again. For 1 glass of cream with 35% fat you will need 3 ripe bananas and 3 tbsp. l. Sahara.
Cottage cheese and red fish. Beat cottage cheese with sour cream, add a little salt and pepper. If the cottage cheese is unleavened, add a little lemon juice. Finely chop lightly salted or smoked red fish and mix with cottage cheese. It is very good to add fresh cucumber to this filling, but in this case it must be served immediately.
Stewed apples with raisins. Peel the apples and cut into cubes. Melt butter in a large frying pan, add raisins and stir-fry for 5 minutes. Then add the apples, sugar and cinnamon stick and continue cooking until the apples are soft but still in shape. At the end, pour 2-3 tbsp into the pan. l. water or orange juice, cover with a lid and leave for 3 minutes. Remove from heat and cool.
