Separate the whites from the yolks. Mix the whites with a whisk without beating. Fry in a pan with olive oil, salt and pepper. Boil the quinoa. Slice the artichokes and avocados, finely grate the daikon, carrots, and beets. Place an omelette stuffed with quinoa, artichokes and avocado on a plate. Top with remaining quinoa and avocado and garnish with vegetables.
For green oil: puree dill and oil in a blender, strain, add salt and pepper.
Fill the omelette with green oil and garnish with dill.
