About This Recipe

Classic beef stroganoff is a dish famous all over the world! Of course, it was not invented by Count Alexander Grigorievich Stroganov himself, but by his chef Andre Dupont. Some sources claim that the peculiar way of cutting beef - into thin strips - is explained by the special request of the “owner”. They say that the count was an elderly man, almost toothless, but he loved meat very much. So the cook figured out how to please the master. According to another version, the count was actively involved in charity work and held a so-called “open table” in Odessa. That is, any well-mannered and decently dressed person could come straight from the street and have a free lunch! The dish invented by Dupont was ideal for these purposes: it was tasty, easy to prepare and conveniently divided into portions. We like the second option better!

Step 1

Prepare all the ingredients for classic beef stroganoff. Wash the beef tenderloin and pat dry well with paper towels. Then cut into large pieces 2 cm thick.

Place the pieces of meat on a work surface lined with cling film. Cover the top with a layer of film as well. Beat the pieces of beef with a meat mallet, being careful not to damage the meat, to a thickness of 7–10 mm.

Cut the chopped pieces of meat into thin strips 3–4 cm long. Season them with salt and ground black pepper to taste. If you like it spicy, you can add a little hot red pepper.

Place a deep frying pan with a thick bottom over high heat and melt the butter. Add the chopped beef and stir-fry over medium heat for 7 minutes.

Wipe the champignons with a damp cloth, peel and cut into slices. Add to the pan with the beef. Stir and cook, stirring occasionally, for another 7 minutes over medium heat.

For the sauce, place the sour cream in a saucepan and heat over low heat. Add sifted flour and mix with a whisk. Add tomato paste. Stir with a whisk and heat for 1 minute.

Pour the resulting sour cream sauce over the beef and mushrooms. Warm over low heat, stirring occasionally. Salt and pepper to taste. Bring to a boil and immediately remove from heat.

Classic beef stroganoff with sour cream is best served with a side dish that will absorb the sauce well. This could be mashed potatoes, buckwheat, rice and even quinoa or small pasta.
