The best way to preserve vitamins for the winter is to make gooseberry jam with lemon. We suggest preparing a dish with green berries. But with red it will turn out no worse. Gooseberries themselves contain a lot of vitamin C. And together with lemon, you get a miraculous jam that will help out during the cold season. It is prepared without cooking. This method of preparation will allow you to preserve vitamins as much as possible. If you don't like the bitterness of lemon, you can replace it with orange. Don't be afraid to experiment and try adding a little mint to your dessert. It will give it a pleasant refreshing taste. Be sure to store the jam in the refrigerator or any other cool place.

Prepare all the ingredients to make gooseberry jam with lemon for the winter. Rinse the gooseberries thoroughly to remove any debris. Place the berries on a towel and let dry naturally. This may take about 3-4 hours.
When the berries are thoroughly dry, carefully sort them out and remove any damaged ones. Using scissors, cut off the tails and dried inflorescences of each berry.
Rinse the lemon thoroughly. Pour clean drinking water into a saucepan and bring to a boil. Dip the lemon into it, and then take it out after 1 minute. Cool.
Cut the lemon in half and carefully remove the seeds. This can be done with a knife or tweezers, if that is more convenient. And then, together with the peel, chop into pieces.
Place the gooseberries in a blender bowl and grind them into a homogeneous puree. You can also do this using a food processor or use a meat grinder.
Then place the lemons in the blender bowl. And turn them into a smooth puree. If you like it when there are pieces of fruit in the jam, then you don’t have to bring the mass to homogeneity.
In a large container, combine gooseberries and lemon, add sugar and leave for 5-6 hours. Stir the jam with a spoon every hour to help the sugar dissolve.
Sterilize the jars in advance in any convenient way. Spread the jam in them to the edges and roll up the lids. It is better to store the dessert in the refrigerator for no more than 1 year.
