Gooseberry jam will never taste cloying, since the berry has a slight sourness. In addition, cherry and gooseberry leaves, with which you will need to cook the berries, will add a special aroma and color to the dessert. To make the delicacy tasty and rich, you need to make small punctures in the gooseberries. It will take a long time to cook. At least 1 hour. The prepared jam is served as a pair for tea, and golden, fluffy pies and buns are also baked with it.

Prepare all the ingredients to make red gooseberry jam. Rinse the berries thoroughly and remove any debris. Using scissors, cut off the tails and dry inflorescences. Place on a towel and dry.
Rinse the cherry and gooseberry leaves thoroughly under running water, then place them on a clean kitchen towel or paper towel and let dry at room temperature.
Prepare the syrup. To do this, pour water into the pan, add sugar and bring to a boil. Place gooseberry and cherry leaves into the pan and cook everything together for 3-5 minutes.
Prepare toothpicks or needles. Make a puncture in each gooseberry. Thanks to this manipulation, the fruits will release juice. The taste of the jam will be more intense.
Place the berries in the syrup and bring the mixture to a boil. Switch the heat to low and cook the dessert, stirring with a wooden spoon, for about 1 hour. Skim off any foam that forms.
Sterilize jars and lids in any way convenient for you (in the oven or in the microwave). Remove the leaves. Distribute the jam among the jars, roll up the lids and turn over. Wrap it up and leave it overnight.
Store jars in a cool, dry place for no more than 1 year. Serve the jam with your favorite hot drinks. Use as a filling for sweet homemade baked goods.
