Everyone will appreciate this homemade coconut cream ice cream recipe. Fortunately, such cream can now be bought in almost every store. The dessert turns out tender and aromatic. Garnish it with a mint leaf and you are guaranteed to enjoy it! To make the ice cream delicious, pay attention to the composition of the coconut cream. They should be 90%, without additives. The remaining ingredients, namely milk cream and eggs, must also be fresh and natural. Coconut cream is quite sweet on its own, so you can easily reduce the amount of powdered sugar in the recipe if necessary. The shavings will give the ice cream an even richer coconut flavor. Add it directly to the ice cream, or sprinkle it on top when serving.

Prepare all ingredients according to the list. Separate the whites from the yolks. You won't need egg whites for this recipe (they can be refrigerated and used in other recipes).
Pour coconut cream into a saucepan, add powdered sugar, egg yolks and stir with a fork or whisk until smooth.
Place the saucepan with the creamy egg mixture over low heat and heat, stirring, until the mixture becomes homogeneous and liquid. The powder should completely dissolve.
Strain the mixture through a fine sieve, pour into a bowl, cover with film (to prevent a film from forming), and cool to room temperature. Remove the film, add coconut flakes and stir.
Pour the cream into the blender bowl and beat until stiff peaks form. Add the coconut mixture in portions, stirring thoroughly after each portion. You should get a homogeneous mass.
Pour the creamy coconut mixture into a container with a lid or place it in special ice cream molds with sticks. Place in the freezer for 5-6 hours. During this time, remove the mass from the freezer several times and beat with a blender so that the mass does not crystallize.
Place the finished ice cream in bowls, form balls with a special spoon, and serve, sprinkled with coconut flakes, garnished with fruits, nuts, jam, whipped cream or chocolate chips.
