Cut the pumpkin with skin and seeds into slices, season with olive oil, salt, pepper, thyme and honey, mix thoroughly and bake in foil in an oven preheated to 200C until tender, 40-50 minutes.
Using a spoon, remove the skin and seeds from the pumpkin. Finely chop the onion and garlic and fry in a mixture of olive oil and butter. add peeled grated ginger, diced potatoes and vegetable broth. Cook until the vegetables are tender and the potatoes are tender, about 20 minutes.
Add pumpkin, heat slightly and puree the resulting mixture with a blender.
Add coconut milk and season to taste with salt. Serve with toasted pumpkin seeds.
