Grate the quince on a coarse grater.
Place half of the quince on the pita bread, distribute evenly over the surface, stepping back a couple of cm from the top and bottom. Sprinkle with 3 tbsp. l. sugar, half a serving of cinnamon and half a cranberry.
Roll up the pita bread and cut into portions. Repeat the procedure with the second pita bread. Grease a baking sheet with vegetable oil and lay out the pita bread.
Place in an oven preheated to 180 degrees for 15 minutes, look at your oven - I only have bottom heat. After 15 minutes, turn the pita bread over and put it in the oven for another 10 minutes.
