“Hedgehogs” made from minced meat with gravy are a rather original variation on the theme of the famous round meat cutlets made from meat with rice. What is the difference? The fact is that minced meat is usually combined with rice, but this recipe involves rolling meat balls in it. Thanks to this non-standard solution, they acquire an original “appearance” that children especially like. In addition, the meat balls are stewed in a sauce made from onions, sweet peppers and tomatoes, which is much better than a boring sauce made from tomato paste, sour cream and water. Do minced hedgehogs require a side dish? We think not, but delicious mashed potatoes certainly won’t spoil the impression of this wonderful dish.

Prepare the ingredients for the hedgehogs. The highlight of this dish is basmati rice. This is the rice used for this recipe. When cooked, it does not thicken, but its length increases. Therefore, the rice grains turn out twisted, as if curly, which actually scares many people for some reason)
Add grated potatoes to the minced meat. It is absolutely not felt in the finished dish, but it gives softness and tenderness. Then I add the egg, herbs, spices, about 1/2 tsp each.
The minced meat must be kneaded very thoroughly. This will have the best effect on the texture of the “hedgehogs”: they will turn out very tender, soft, and incredibly tasty.
Place hedgehog rice in a bowl. Pour boiling water (it should cover three fingers of cereal) and leave at room temperature until use (at least 15 minutes).
Peel the onion and chop finely. Heat vegetable oil in a frying pan. Add the onion and lightly brown over low heat. Stir occasionally.
Cut the sweet pepper into cubes or strips, removing seeds and membranes. Then place the prepared peppers in a frying pan with lightly browned onions.
Wash the tomatoes, then cut them into halves. Grate on a coarse or medium grater into a bowl. Throw away the peel. If desired, you can use ready-made pureed tomatoes.
Add tomatoes to vegetables. Be sure to taste it, you may need to adjust the taste with sugar. Add salt, spices, pepper. Leave the gravy to simmer while you form the hedgehogs.
We form “hedgehogs” from the previously prepared minced meat. You should end up with small balls slightly larger than a table tennis ball.
Place the rice that we soaked in boiling water in a fine sieve. Let the water drain. Transfer the rice to a plate. Roll the previously prepared minced meat balls in rice.
If you press the balls down and make them like flat cakes, then in preparation you will get a dish similar to a chrysanthemum flower, and if you leave them round, you will have “hedgehogs” like the one in my photo.
Place the “hedgehogs” in a frying pan with vegetable sauce and gravy. Cover with a lid and simmer over low heat until done, about 40 minutes. We determine readiness by looking at the rice.
Taste the vegetable gravy and, if necessary, add salt and pepper again. Serve the minced “hedgehogs” right away: they are very good hot.
