Prepare the strawberry confit ingredients. Place gelatin in a small bowl and fill with cold drinking water. Leave for 15 minutes at room temperature to allow it to swell.
Sort the strawberries, wash and dry them, laying them out on a paper towel. If the berries are large, cut them into quarters. Place the prepared strawberries in a wide saucepan.
Cover the strawberries with sugar and leave for 15 minutes. Then place over low heat and heat, stirring gently occasionally. When the mixture just begins to boil, remove from heat and pour into a large bowl.
Add lightly squeezed gelatin and mix thoroughly. Let cool, then refrigerate for 15 minutes. Then use as you wish. You can put it in bowls and serve for dessert.
