The first step is to prepare the gooseberries. The berries must be ripe and undamaged. Rinse them thoroughly and remove debris along the way - sticks and leaves.
Mix the berries with sugar and leave for 2-3 hours so that they release their juice. Meanwhile, place a saucepan over medium heat and add a glass of water. Wait until the water boils.
Add the berries and sugar to the boiling water and stir until the sugar is completely dissolved. Reduce the heat to low and let the jam simmer over low heat for at least 45 minutes. Keep in mind: the longer the jam is cooked, the thicker it becomes.
During the cooking process, do not forget to stir the jam periodically so that it does not burn or stick to the bottom of the pan. When the berries are soft but not falling apart, remove the pan from the heat and let the jam cool.
Transfer the finished jam into sterilized jars and immediately close the lids. Thick gooseberry jam is ready for the winter. Store it in a cool, dark place.
