Dissolve salt and sugar in water, squeeze lemon juice into water, add the rest of the spices and vinegar, stir well. Coat the duck with marinade and put it in the refrigerator for 12 hours.
Let's prepare the filling. To do this, you need to wash the oyster mushrooms and cut off the roots. Chop the onion into small cubes and grate the garlic on a fine grater. Fry the mushrooms in vegetable oil until half cooked, adding onion and garlic.
Add white wine and spices to the mushrooms, simmer until fully cooked, and then cool.
Stuff the marinated duck with prepared mushrooms, brush with a mixture of adjika and butter and bake in the oven for 50 minutes at 180 degrees.
