If for some reason you can’t eat wheat flour, just make rye cheesecakes. Fluffy curds will not lose anything from this replacement, but on the contrary will acquire an unusual taste and color. Sugar is banned - add artificial sweeteners (stevia, erythritol). Prepare rye cheesecakes with dried fruits or banana if you want to serve them for dessert. You can generally make not sweet, but salty curds by adding a little grated suluguni to the dough and serving them with sour cream or unsweetened yogurt. It is better to fry cheesecakes made from rye flour in a frying pan with vegetable oil. But you can bake it in the oven without it at all. And remember that tasty and fluffy rye cheesecakes can only be made from the highest quality cottage cheese with a fat content of 5-9%.

Prepare all the ingredients for making rye cheesecakes according to the list. If the cottage cheese is wet, then place it in cheesecloth and squeeze. Then return to the bowl and mash with a fork until smooth.
Break the eggs into a bowl, add salt and beat with a whisk or blender until smooth. Add sugar and vanilla sugar to it, beat again.
Pour the egg mixture into the curd mixture and stir, breaking up any lumps. Start adding sifted rye flour in portions, kneading a homogeneous dough. You may need less flour, depending on. cottage cheese humidity. Leave the dough for 10 minutes at room temperature.
Wet your hands in water. Separate part of the dough, forming a round piece of the desired shape and size. You can roll them in flour if necessary.
Heat vegetable oil in a frying pan, add cheesecakes and cook them over medium heat on one side until golden brown. Then flip over with another spatula and fry for another 3 minutes.
Place the cheesecakes on a paper towel folded in half to remove excess fat. Serve them hot with your favorite drinks, sour cream or condensed milk.
