There are many kinds of plum pies, each with a different recipe, and I want to offer my version. It is made with sour cream and turns out incredibly fluffy, tender, and delicious! The combination of juicy fruit filling and delicate airy dough will appeal to everyone without exception. This fragrant pastry seems to be made for cozy family evenings! For making the pie, choose ripe sweet plums with a pleasant sourness. The recipe is simple, budget-friendly, and very successful! You will love it for its ease of preparation, softness, and melt-in-the-mouth texture.

Wheat flour of the highest grade - 300 g
Large chicken eggs - 3 pcs.
Sugar - 160 g
Sour cream 25% (classic) - 160 g
Refined vegetable oil - 110 ml
Baking powder for the dough - 10 g
Vanillin - 1 g
Salt - 2 g

In a deep bowl, combine 3 chicken eggs and sugar.
Whisk the ingredients at the mixer's maximum speed for 8-10 minutes until a fluffy and light mass is obtained.
Pour refined vegetable oil into the resulting mixture. Mix the ingredients with a whisk until smooth.
Add sour cream with a fat content of 20-25% to the dough and mix.
Add baking powder, salt, and vanillin to the dough for aroma. If desired, vanillin can be replaced with vanilla sugar or extract.
Enter half of the sifted wheat flour into the dough. Mix the ingredients thoroughly.
Add the second half of the wheat flour to the dough, mix until smooth.
The ready dough with sour cream should be homogeneous and flow off the spatula in a wide ribbon. Place the pie dough in a heat-resistant baking dish with a diameter of 22-24 cm, greased with oil. I used a silicone baking form, so I skipped this step.
Wash the plums, cut them in half, and remove the pits. Place the fruit halves cut side down in a baking dish, slightly submerging them in the dough.
Place the plum pie in the oven preheated to 180 degrees for 40-45 minutes. After the specified time, check the readiness of the pastry using a wooden skewer. If it comes out of the pie dry, without any traces of dough, the pastry is ready.
Cool the pie on a rack to room temperature. Before serving, decorate the pastry with powdered sugar.
Serve the delicate and fragrant plum pie with tea or coffee. Enjoy!
