Peel the onions, chop them into small cubes. Wash the carrots, peel them, and grate them on a large grater. Wash the bell pepper, cut it in half, remove the seed box, and chop the vegetables into small cubes.
In a saucepan, mix vegetable oil and butter. When the mixture heats up, place onion, carrot, and bell pepper in the saucepan. Stirring occasionally, sauté the vegetables over medium heat until soft.
Wash the potatoes, peel them, and cut them into medium-sized cubes using a crinkle-cut knife.
Add the chopped potatoes to the sautéed vegetables.
Thoroughly rinse the buckwheat groats, add to the pot with vegetables.
Remove the casing from the high-quality sausages and cut into half-rings.
Add the sausages to the pot with the other ingredients.
Pour hot chicken broth into the pot, stir. Add a bay leaf and allspice berries for aroma.
Cook the "Shakhtarsky" soup on low heat until the vegetables and buckwheat are ready. At the end of cooking, add salt, spices, and finely chopped parsley and dill. Cook the soup for another 1 minute, then remove the pot from the heat.
Pour the fragrant soup with buckwheat and sausages into portioned plates and serve at the table.
Enjoy your meal!
