Whisk two eggs with sugar, salt, and vanillin until you get an airy mixture. Gradually pour in kefir in a thin stream, continuing to whisk.
Carefully add the sifted flour and baking soda, mixing thoroughly to avoid lumps. Let the dough rest a little to improve its consistency.
Gradually pour hot water into the dough in a thin stream, while stirring constantly. This will give the pancakes a special tenderness. Let the dough sit for 15-20 minutes.
Gently pour in the vegetable oil, stirring smoothly so that it is evenly distributed in the dough.
Bake thin pancakes on a hot griddle, lightly oiled. Gently brush each pancake with melted butter. Stack the pancakes on a beautiful plate.
Thoroughly rub the cottage cheese through a fine sieve to give it an airy texture. Beat it with eggs and sugar until smooth.
Carefully sort the cranberries, wash and dry them. Set aside a few berries for decoration, gently crush the rest with a pestle. Combine the curd mass with the cranberries, stir gently.
Whisk the remaining egg with a whisk to make a binding glaze. Grease the mold with butter. Overlap 5 pancakes on the bottom of the mold, carefully greasing the joints with egg.
Carefully place some of the cottage cheese filling on the pancakes, then cover with a whole pancake. Repeat the layers until the filling is gone. The filling should be on top. Gently cover the filling with the overhanging edges of the pancakes, greasing the seams. Grease the top with egg, put another pancake on top and grease it as well. Place in the oven, preheated to 180 degrees, for 12-15 minutes.
Slightly cool the finished pancake pie. Beat room temperature sour cream with sugar until creamy. Spread the cream on the pie, garnish with juicy cranberries, and serve!
