Prepare an aromatic syrup: pit the cherries. Break the cinnamon sticks in half and place them in a saucepan, add star anise, cloves and brown sugar. Pour in red wine and freshly squeezed lemon juice. Place over low heat and gently bring to a boil. Simmer for about 10 minutes to allow the spices to release their aromas.
Combine the flavors: add honey, lemon zest, and prepared cherries to the fragrant syrup. Bring the mixture to a boil, stirring gently to allow the berries to soak in the syrup. Cook, stirring occasionally, until the cherries are soft, about 7–10 minutes.
Complete the preparation: remove the sauce from the heat and let it cool so that all the flavors combine. Before serving, remove the cinnamon sticks and cloves. Enjoy the harmonious taste of the sauce with your favorite cheese!
