Soak the saffron in wine or water for 15-20 minutes, allowing the aromas to fully unfold. Let them steep, so that each thread is filled with life-giving moisture.
In a saucepan, bring 2 cups of water to a boil, add salt, pour in the cereal, and stirring, wait for it to boil. Then cover with a lid and cook over low heat until all the water is completely absorbed. Let the cereal simmer gently, absorbing every drop.
Carefully mix the cream with the yolks and add a pinch of salt, bringing to a homogeneous consistency. For perfect smoothness, strain the mixture, getting rid of protein "threads".
Pour the saffron with wine or water into the cereal and add the yolks with cream. Stir vigorously so that the color spreads evenly, like sunbeams in a golden field.
