Preheat oven to 170 °C. Rub the fish with salt and pepper on all sides, let it soak in the aromas of spices for 10 minutes. This simple step will allow the cod to reveal its flavor and will make the dish unforgettable.
Cut the leeks lengthwise in half, then cut into long strips. Thoroughly rinse the strips in plenty of cold water to get rid of any sand that may be hiding between the layers. Drain in a colander to remove excess water.
Clean the carrots and cut them into thin, long strips. In a spacious bowl, combine the carrot strips and fragrant leeks. This vibrant vegetable mixture will be a wonderful addition to delicate cod.
Prepare eight sheets of foil approximately 30 x 30 cm. On four sheets, in the center of each, place a generous layer of the leek and carrot mixture. Drizzle the vegetables with vegetable oil, salt, and season with freshly ground pepper. This fragrant vegetable mat will serve as a cushion for the fish.
Place a piece of fish on the vegetable base. Directly onto the cod, cut thin slices of frozen butter (it's easiest to use a vegetable peeler). The butter will give the fish juiciness and a unique creamy taste.
Cover the fish and vegetables with the remaining sheets of foil and carefully seal the edges to create airtight square packets. In this form, the packets can be prepared in advance (1–4 hours before baking) and stored in the refrigerator.
Place the packets on a baking sheet and bake in a preheated oven for 15 minutes. Carefully transfer the finished packets to plates and cut the foil – be careful, there is hot steam inside!
