Thoroughly wash the oranges. Carefully peel the zest along with the white part, using a knife. Cut the peels into strips (7 cm long and 0.8 cm thick). Immerse in 500 ml of water and cook for 10 minutes. Then drain in a colander. Repeat this process 2 more times to get rid of the bitterness in the zest.
Immerse the prepared orange peels in 1 liter of cold water, add 250 g of sugar and cook over medium heat for 20 minutes. Add another 250 g of sugar and cook for 15 minutes. Repeat this operation twice more, using all the remaining sugar.
To prevent the syrup from ruining the chocolate, after cooking, drain the candied fruit in a sieve, let the syrup drain, then pat dry with a napkin. Melt the chocolate in a hot water bath until it becomes liquid and shiny.
Dip the candied fruits in melted chocolate. Shake off the excess chocolate to avoid drips, and sprinkle chocolate flakes on top. Let the chocolate harden completely at room temperature to create a delicious finish.
