Start cooking by preparing the gelatin: soak it in cold water for ten minutes. Then, carefully rub ripe, pitted persimmons through a fine sieve to obtain a delicate puree.
In a small saucepan, combine freshly squeezed lemon juice, a tablespoon of water, and sugar. Stirring, heat the mixture over low heat to a boil, so that the sugar is completely dissolved. Gently squeeze the gelatin from excess liquid and add it to the hot sugar syrup. Stir thoroughly until the gelatin is completely dissolved. Add the persimmon puree, mix, and cool for 20 minutes.
Prepare a fragrant infusion: pour ground saffron with a small amount of white wine and let it steep for 10 minutes. In a separate bowl, whip very cold cream until stiff peaks form. Gently add the saffron infusion to the whipped cream and delicately fold to preserve lightness.
In several stages, gently fold the whipped cream into the persimmon mixture. Use a spatula and make movements from the bottom up to preserve the airiness of the mousse. Arrange the resulting mixture into prepared molds and refrigerate to set for at least 4 hours.
