To begin preparing the cream of Brussels sprouts soup, heat one tablespoon of olive oil in a saucepan. Then, sauté the finely chopped onion until soft.
Thoroughly wash the Brussels sprouts and halve each one. Add the prepared sprouts to the pot with the onions and cook, stirring constantly, for two minutes.
Sprinkle the vegetables with dried garlic and mix thoroughly. Pour in the hot vegetable broth, bring to a boil, and simmer for 12-15 minutes until the Brussels sprouts are tender. Afterward, blend the soup with an immersion blender until it reaches a smooth, creamy consistency.
Pour the almond milk into the pot with the prepared cream soup. Heat the soup, without bringing it to a boil, then season with salt and pepper to taste.
Slice the garlic clove into thin pieces. Fry the garlic slices in the remaining olive oil until golden brown and crispy.
Ladle the aromatic Brussels sprout cream soup into bowls. Before serving, sprinkle each portion with crispy garlic "chips" and chili flakes for a piquant touch.
