Adding honey mushrooms to simple fried potatoes creates a truly autumnal and aromatic dish, especially if the mushrooms are fresh. However, frozen or even canned honey mushrooms will also work. Start by frying the mushrooms with bacon pieces to enhance their flavor. Then, add the potatoes and cook the dish until done. Remember to add seasonings and salt to the fried potatoes at the very end. Otherwise, excess liquid might be released, and you want to retain as much of the juices within the ingredients as possible.

Honey mushrooms fresh - 300 g
Bulb onions - 1 pcs.
Bacon - 100 g
Ground black pepper - 1 pinch
Seasoning for potatoes - 1 tsp.
Salt - ½ tsp.
Fresh herbs (basil, parsley, mint, tarragon) - to taste

Wash and peel the potatoes. Peel the onion. Sort through the honey mushrooms to remove any debris, then rinse them thoroughly. Prepare a frying pan.
Chop the honey mushrooms. Leave small mushrooms whole, and cut larger ones into small pieces. Dice the bacon strips into small squares.
Heat a dry skillet over medium heat. Fry the bacon for 3 minutes, stirring occasionally.
Increase the heat to high. Add the honey mushrooms to the pan. Sauté them for 3 minutes, stirring constantly. Then cover the pan and reduce the heat to low. Cook the mushrooms for 10-15 minutes.
Dice the potatoes into small cubes. Mince the onion.
Add the potatoes to the pan with the mushrooms. Stir. Cover again with the lid. Simmer everything together for another 15 minutes over medium heat.
Add the onion to the pan. Season with salt, black ground pepper, and potato spices. Mix thoroughly. Continue to fry the potatoes with onions and mushrooms for another 5 minutes.
Serve a portion of potatoes with honey mushrooms, garnished with herbs and accompanied by various pickles on the side.
