Begin by preparing the broccoli: carefully trim the stems, setting them aside, and separate the florets into small pieces. Next, take a lemon, grate its zest using a fine grater, and then squeeze out the juice.
Cook the pasta al dente according to package directions. Two minutes before the pasta is done, add the broccoli florets to the pot.
Drain the cooked pasta and broccoli using a colander, reserving some of the cooking water. Combine the pasta with the prepared pesto, adding a little of the reserved water for the perfect consistency. Sprinkle with the remaining Parmesan and lemon zest, season with freshly ground pepper, and garnish with fresh mint leaves before serving.
Prepare aromatic pesto: finely chop the broccoli stems in a blender, adding mint leaves (reserve a few for garnish), hazelnuts, 50g Parmesan, lemon juice, and half of the lemon zest. Season with salt to taste. While continuing to blend, slowly drizzle in olive oil until the sauce reaches the perfect consistency.
