To create the perfect sauce, select the ripest and juiciest tomatoes, such as pink varieties. To easily peel them, make a cross-shaped incision at the base of the stem.
Submerge the scored tomatoes in boiling water for just one minute, then immediately transfer them to cold water. After this process, the skin will easily loosen, and you'll be able to peel it off even with your fingers.
Finely chop the tomato pulp. If you prefer a smoother and more uniform sauce consistency, use a blender. Set aside the prepared tomatoes until ready to use.
Peel and mince the onion and garlic. Lightly sauté them in olive oil in a small saucepan until golden brown. Then add the chopped tomatoes, season with sugar, dried herbs, and freshly ground pepper. Simmer over low heat for 15 minutes to allow all the flavors to meld together.
To give the sauce a richer color and deeper flavor, incorporate some tomato paste. Taste the sauce and adjust the seasoning with salt if needed to balance the flavors. Continue to simmer for another 5 minutes.
The prepared sauce should be quite thick. Let it cool, then transfer it to a clean jar. Seal the jar with a plastic lid and store it in the refrigerator until ready to use. This sauce retains its quality and aroma exceptionally well.
