Prepare all necessary ingredients and kitchen utensils. Thoroughly wash the mushrooms and peel the onion. Soak the semolina in one tablespoon of cool water to allow it to swell. Wash the chicken egg. Prepare a small pot for boiling mushrooms, a meat grinder for mincing, and a frying pan for cooking cutlets. Pour the breadcrumbs onto a flat plate so they are readily accessible.
Pour one liter of water into a saucepan and bring it to a boil. Carefully place the mushrooms into the boiling water and cook them for 20 minutes. After cooking, carefully drain the broth and allow the mushrooms to cool completely.
While the mushrooms are cooling, finely chop the onion. Heat 2 teaspoons of vegetable oil in a skillet and sauté the onion over low heat for 2-3 minutes until soft and translucent.
Pass the boiled mushrooms through a meat grinder. Combine the minced mushrooms with sautéed onions and swollen semolina. Break an egg into the resulting mixture, add pepper and salt to taste. Thoroughly mix all ingredients until a homogeneous mass is formed.
Form neat balls or patties of the desired shape from the mushroom mixture and carefully roll them in breadcrumbs. Heat the remaining vegetable oil in a pan and fry the patties over medium heat until an appetizing, firm brown crust forms on both sides.
Serve the prepared mushroom cutlets, drizzled with a delicate cream sauce or light sour cream, to give the dish a complete flavor and aroma.
