Prepare the ingredients: thoroughly wash and peel the onion, wash the chicken egg, and sift the flour through a fine sieve for aeration.
Whisk together milk, chicken egg, salt, and sugar with a mixer until smooth. Gradually add the sifted flour, mixing to form a thin pancake batter. Finally, pour in the vegetable oil and mix thoroughly until the batter is smooth and lump-free.
Heat a frying pan and cook thin pancakes, spreading the batter evenly over the surface. Fry each pancake for 1-2 minutes on each side over medium heat until golden brown.
Finely chop the herring fillet, onion, and fresh dill. Pour boiling water over the chopped onion for 5 minutes, then drain the water. In a bowl, combine the prepared fish, onion, and dill to create a flavorful filling.
Spread a thin layer of sour cream on each pancake. Evenly distribute a small amount of the prepared filling over the pancake and carefully roll it into a tight cylinder. Refrigerate the finished rolls for at least 1 hour before serving, allowing them to chill thoroughly and absorb the flavors.
Before serving, slice the chilled rolls into individual portions. Arrange them attractively on a plate and garnish with olives for a finishing touch to both appearance and flavor.
