Begin by preparing all ingredients: thoroughly rinse the chicken fillet and pork, then carefully pat them dry with paper towels. Peel and wash the onion and garlic. Rinse the chicken egg. Take the kefir out of the refrigerator. Prepare the meat grinder, bowls, a lidded frying pan, and a beautiful serving dish.
Break the slices of bread into small pieces. Place them in a bowl, pour kefir over them, and let them sit for 10 minutes so the bread can soak thoroughly.
Dice the pork and chicken fillet into small pieces, then grind them through a meat grinder to achieve a uniform mince.
Cut half an onion into several pieces and mince them as well. Press or finely grate the garlic cloves, then add them to the ground meat.
Lightly squeeze the kefir-soaked bread pieces, pass them through a meat grinder, and thoroughly combine with the ground meat.
Crack an egg into the minced meat, then add salt and black pepper. Knead the mixture thoroughly until it reaches a smooth and uniform consistency.
Place the flour in a clean, dry bowl. Shape the minced meat into oblong patties and dredge them thoroughly in the flour.
Heat a frying pan over high heat, add sunflower oil, and let it get very hot. Place the cutlets in the pan and fry for 4-5 minutes on each side until golden brown.
Reduce the heat to low, cover the pan, and simmer the patties for another 2-3 minutes until fully cooked. Then, transfer them to a serving dish.
