Thoroughly rinse the pork leg. Prepare the chili peppers and garlic by peeling them. Take a deep bowl for the marinade and a baking dish.
Mince the garlic with a press, and slice the chili pepper into thin strips to release its aroma.
Preheat the oven to 170 °C. Arrange the chili pepper strips at the bottom of a baking dish. Carefully place the marinated meat on top, fat side up. Evenly pour the remaining marinade from the bowl over the ham.
Place the dish with the meat in the preheated oven and bake for 2 hours. Afterward, remove the ham and allow it to cool completely at room temperature. Then, refrigerate the baked meat for 6-7 hours to enhance its tenderness and aroma.
Slice the chilled pork leg into thin, Asian-style pieces. Garnish with fresh cilantro for a vibrant touch and serve with spicy chili sauce to enhance its savory flavor.
Pour soy sauce into a bowl, then add fragrant honey, mustard, and minced garlic. Stir in black ground pepper, dried ginger, and salt. Mix all ingredients thoroughly until smooth.
Completely submerge the ham in the prepared marinade. Turn the meat over several times to ensure it's evenly coated with the aromatic mixture. Place the ham in the refrigerator for 3-4 hours to marinate thoroughly.
