It is commonly believed that a blend of beef and pork mince is essential for excellent cutlets. However, delicious cutlets can also be made solely from pork. For this dish, chilled meat with a small amount of fat is suitable, such as ham, shoulder, or loin. Bread soaked in milk will impart a mild flavor to the meat and, along with semolina, will help make the cutlets fluffy. If the cutlets are coated in breadcrumbs and placed on a preheated pan, they will quickly "set," brown, and retain all their juices inside.

Prepare all necessary ingredients: wash and pat dry the pork and chicken egg. Soak the bread slices in milk. Peel and wash the onion. Pour the breadcrumbs onto a flat plate. Get ready the meat grinder, a thick-bottomed frying pan, and a small pot with a lid.
Dice the pork into medium-sized pieces and then grind them in a meat grinder to achieve a fine mince.
Cut the onion into 3-4 pieces and also grind it in the meat grinder so that it is evenly distributed throughout the minced meat.
Squeeze the milk from the bread slices and pass them through a meat grinder, adding them to the ground pork. This will give the cutlets a special tenderness.
Season the ground meat with a fragrant blend of meat spices, add salt, beat in an egg, and stir in semolina. Mix all ingredients thoroughly until uniform.
Form neat patties, about 6 cm in diameter, from the prepared minced meat and thoroughly coat them on all sides in breadcrumbs to achieve a crispy crust.
Pour vegetable oil into a well-heated pan, place the cutlets, and fry them for about 3 minutes on each side until golden brown.
Place the cooked cutlets in a pot, cover them, and let them rest for 5 minutes. This will make them even juicier and more flavorful.
