Rinse the liver thoroughly, then soak it in salted water for 2 hours. After that, rinse it again and carefully remove any excess membranes, veins, and fat. Wash the fresh parsley.
Slice the prepared liver into medium-sized pieces. Sauté them in a pan with vegetable oil over medium heat for 5 minutes. Then, season with salt and pepper to taste. Heat water and pour 200 ml into the pan with the liver.
Reduce the heat to low and cover the pan. Simmer the liver for 20 minutes until it becomes very tender.
In a separate bowl, whisk the flour into the remaining water until smooth. Finely chop the parsley and add it to the flour mixture. Pour this mixture over the liver, bring to a boil, and simmer for another 5 minutes until the gravy thickens.
Serve the dish by placing a small amount of your favorite side dish on a plate. Top it with a portion of tender liver and generously pour the aromatic gravy over it. To add brightness and freshness to the dish, garnish it with cherry tomatoes and microgreens.
