Start by boiling the new potatoes in their skins in salted boiling water. Cook them until completely tender, which will take approximately 15–20 minutes, depending on the size of the tubers. While the potatoes are cooking, gently warm olive oil with fresh herbs – thyme and oregano – in a small skillet. This little secret will help the herbs fully release their aroma and flavor.
Once the potatoes are cooked, carefully drain the water and transfer them to a deep bowl. Take a fork and gently press down on each potato: it's important for the skin to burst and the potato to be slightly flattened, but still retain its shape and not turn into a mash.
