The preparation of syrniki begins by mashing cottage cheese through a sieve or blending it with an immersion blender. This makes the mixture more uniform, without large lumps. Then, add an egg with sugar and mix in the flour. The flour will give the cottage cheese mixture the necessary consistency. The dough should be firm enough so that the syrniki do not fall apart when fried. Serve them with sour cream, jam, honey, or condensed milk.

Sift the flour. Prepare a deep bowl and a frying pan.
Mash the cottage cheese with a fork to remove any large lumps.
Combine the cottage cheese with sugar and vanilla. Add 1 tablespoon of flour and mix thoroughly.
Sprinkle the table with the remaining flour. Form the cottage cheese mixture into a 5-6 cm diameter sausage on the table. Cut it crosswise into 1-2 cm thick discs.
Heat the vegetable oil in a frying pan. Fry the syrniki for 3-4 minutes on each side.
Serve the syrniki with jam, a fruit platter, or chocolate sauce.
