Begin by preparing the melon: carefully peel it and remove the seeds, then cut the flesh into small cubes. Arrange the melon pieces in a single layer on a tray and place them in the freezer for 3-4 hours until completely frozen. The frozen melon will blend more easily, turning into a smooth, creamy consistency.
Now, let's prepare the creamy base. Whip the chilled cream with powdered sugar until soft peaks form. Add freshly squeezed lemon juice and vanilla extract, continuing to whip for another 30 seconds. The lemon juice will not only prevent the cream from separating but also add a pleasant fresh note to the dessert.
Place the frozen melon pieces into a blender cup, then add the prepared cream mixture. Blend on high speed for 2-3 minutes, pausing occasionally to scrape the mixture from the sides of the cup. The result should be a perfectly smooth and airy consistency, free of lumps.
Transfer the prepared mixture into a freezer-safe container or a silicone mold. Gently smooth the surface with a spatula. Then, cover the dessert with plastic wrap, ensuring it adheres tightly to the surface. This will help prevent the formation of an icy crust and large ice crystals, which could compromise the smooth texture of the ice cream.
Place the container of ice cream in the freezer for 4-6 hours. To achieve a perfect, creamy texture, remove the ice cream approximately 2 hours into freezing and stir it thoroughly with a fork. This will help break up any ice crystals that form and make the dessert even smoother.
Ten minutes before serving, remove the ice cream from the freezer to allow it to soften slightly. Using a special scoop, form appealing balls and arrange them in dessert bowls. Garnish the dessert with fresh mint leaves and small pieces of melon to enhance its visual appeal and aroma.
