Begin with thorough preparation: rinse the lentils under cold water, then wash and dry the mushrooms and fresh herbs. Rinse and peel the onion. Ensure you have a pot, a frying pan, and an immersion blender at hand.
Transfer the lentils to a deep bowl, cover with water, and let them soak for 10-12 hours until they are well plumped. Afterward, rinse the lentils thoroughly.
Transfer the prepared lentils to a pot, cover with fresh water, and season with salt to taste. Add cardamom for an exquisite aroma. Simmer the lentils for approximately 40 minutes until fully cooked, soft, and tender.
Add coconut milk and butter to the cooked lentils. Use an immersion blender to transform all ingredients into a smooth, creamy puree.
Finely chop the fresh dill. Add it to the fragrant puree and mix thoroughly so that the herbs are evenly distributed, lending freshness to the dish.
Heat a skillet and pour in the olive oil. Add the finely chopped onion and sauté for 2-3 minutes, stirring constantly, until golden brown and softened.
Add sliced mushrooms to the fried onions. Sauté the mushrooms, stirring occasionally, for 10 minutes until they are tender and fragrant. Then turn off the heat.
Spoon the tender lentil puree onto a plate, forming an appetizing base. Carefully spread the sautéed mushrooms and onions on top, ensuring every bite is infused with their flavor.
Serve this delicious dish immediately after preparation, while it is still warm and exuding its unique aroma. Enjoy every bite!
