This pork roast is a true culinary masterpiece! The meat turns out incredibly tender and juicy, with the tomato juice adding a pleasant tang. Gather all the necessary ingredients. If the meat is frozen, remove it from the freezer in advance and allow it to thaw at room temperature. Thoroughly rinse the pork. Peel and wash the onion and garlic.
Pat the pork dry with paper towels. Cut the meat into large strips, approximately 2-3 cm thick.
Pour vegetable oil into a heavy-bottomed skillet and place it over heat. Once the oil is thoroughly heated, add the meat pieces to the pan. Reduce the heat and sauté the pork, stirring occasionally.
Season the meat with salt and pepper, then continue frying for another 5-7 minutes until it develops an appetizing crust.
Slice the onion into thin strips.
Add the chopped onion to the meat. Stir and cook, stirring occasionally, for about 3 minutes, until the meat is browned and the onion is tender.
Pour the tomato juice into the pan and mix thoroughly. Cover and simmer until the meat is fully cooked, about 5-7 minutes, so it becomes incredibly tender.
Mince the garlic with a knife or press it.
Add minced garlic to the meat 2 minutes before the end of cooking. Stir and add more salt if necessary. Continue frying until the meat is tender, but do not overcook it, so that the dish does not become dry. When the roast is ready, remove it from the heat and let it cool slightly before serving.
Serve the aromatic pork roast with stewed or fresh vegetables, savoring every bite of this delightful dish.
