To begin, in a large bowl, combine the sifted wheat flour, cornstarch, a pinch of salt, and baking powder. Whisk all the dry ingredients thoroughly until well combined.
Lightly toast the nuts in a dry pan until golden brown, or dry them in an oven at 150 ºC. Then, finely chop them with a knife or blend them into small crumbs.
Preheat the oven to 180 ºC. Grease baking molds (metal or silicone) with odorless vegetable oil or, even better, butter.
Crack room-temperature chicken eggs into a separate mixing bowl. Add regular and vanilla sugar, then pour in slightly warmed water.
Beat the mixture with a mixer for a few minutes on low speed, then gradually increase the speed to maximum and continue beating for a little longer. The total beating time should be about 7 minutes.
Carefully incorporate the prepared dry ingredients and chopped nuts into the egg and sugar mixture. Gently fold all components together with a spatula, using a folding motion to maintain the lightness of the batter.
Place the prepared dough into bunny-shaped molds. Do not fill the molds completely, as the dough will rise significantly during baking.
Place the molds with the dough in the preheated oven on the middle rack and bake the "Bunnies" Easter cookies for approximately 30 minutes. Baking time may vary depending on the size of the molds. Let the finished, golden-brown cookies cool directly in the molds, then remove them and, if desired, sprinkle with powdered sugar.
