Drizzle the chicken fillets with olive oil and season with salt. Grill for 3 minutes on each side until golden brown.
Grate the Parmesan cheese finely, so it's ready to be added to the salad.
For garlic croutons: Slice the baguette thinly. Pour olive oil into a heated pan and add finely chopped garlic. Lightly fry the croutons in the aromatic oil, then bake them in the oven for 10-12 minutes until golden and crispy.
Arrange fresh lettuce leaves, sliced chicken fillet, and crispy croutons on a serving plate. Garnish with anchovy fillets and generously drizzle with the prepared sauce. Sprinkle grated Parmesan cheese on top. Enjoy your meal!
For the dressing: Preheat the oven to 170°C. Place the eggs in an oven-safe pot, cover with boiling water, and bake in the oven for 15 minutes. Then drain the water and cool the eggs under cold running water. Separate the yolks from the whites and mash the yolks with a blender. Add lemon juice, anchovies, garlic, Dijon mustard, and Worcestershire sauce, then blend again. While continuing to blend, slowly drizzle in the olive oil until thickened. Season the dressing with a pinch of sugar, sea salt, and freshly ground black pepper to taste.
