Start by preparing the peas: wash them thoroughly, then dry them well. This step is important for obtaining perfect pea flour.
Using a coffee grinder, turn the dried peas into fine pea flour. This will give the pancakes a special texture and aroma.
In a separate bowl, combine the freshly ground pea flour with wheat flour to create the base for the dough.
Wash the zucchini. If their skin is tough, peel it. Then, finely chop the zucchini along with the garlic in a food processor or blender until pureed.
Add salt and all the spices to the zucchini mixture. Then, gradually incorporate the flour mixture, stirring until the batter reaches the consistency of thick sour cream. This will ensure the perfect texture for the pancakes.
